Kale salad

           I've always loved kale salad because I used to think it was the only time where fruit belonged in a salad. We are more of a vegetable-house salad type of family. I now know this is stupid and fruit can go where ever it pleases so I frequently enjoy fruit in all of my salads. However after this discovery I still find myself going back to this recipe because kale has a certain bitterness that you can't get from other types of lettuce, its a unique taste that kale can only give you.

Take this recipe as a template but explore with the toppings and dressings. Just because this is my favorite kale salad variation doesn't mean I haven't made some wildly different ones in my time that also tasted great. 

 

Massaging the kale: every time I bring this topic up, I'm bound to get a few stares. It sounds stupid, I know. But massaging the kale will break down the fibers making it less bitter and soft. This makes it easier to chew and digest, also it obviously makes it taste better. Citrus and oil helps with this process so that's why we put the dressing in before massaging the kale.
